• 6 dL lukewarm water
• 1 cup of yogurt
• 50 gr. Yeast
• 100 gr. melted butter
• 1 medium-sized egg
• 2 tsp fine salt, without top
• 2 tablespoons
sugar without top
• 950 grams of sifted wheat flour (about 1500 ml)
How to make:
Its most easy to make this bread with a stand mixer with a minimum 2.5 l bowl.
Pour the tempered water in
the bowl and add the yogurt, egg, sugar and salt. Start mixing on low speed. Add about 250 g of the flour and continue mixing for 3-5 minuttes or until the dough looks like a porridge. Now add the yeast and a little later the melted but not hot butter. Slowly
start adding the remaining flour untill the dough firm and elastic. From this moment continue to mix on medium high speed for another 5-8 minuttes. If you feel the dough it should feels very elastic.
Fold the dough to a ball and let it rest for an hour
or until double in size.
Knead the dough and fold it to bread shape or place it in a bread form.
Bake it in a pre-heated oven at 220C and turn immideately the temperatur to 180C. Bake for 35 minuttes or so. You can use a termometer to check the
internal temperatur of the bread, it should be 95-96C.
