Hunters Sausage

  • 500         g              lean beef ground
  • 500         g              lean beef boiled and diced
  • 1500       g              lean pork
  • 750         g              back fat ground
  • 250         g              frozen green beans
  • 40           g              salt
  • 20           g              cure #1
  • 5             g              accord powder
  • 6              g              coriander
  • 6              g              all spice
  • 1              pc           chicken cube
  • 700         g              crushed ice

 

  1. Boil 500 g lean beef for 1-1½ hours, dice and refrigerate
  2. Boil the frozen beans for 1 min and refrigerate
  3. Add 500 g lean beef and 500 g lean pork to the bowl run 1 min
  4. Add 350 g ice plus spices
  5. Add 1000 glean pork run 1 min
  6. Add 350 g ice
  7. Add 750 g back fat and run until fully emulsified
  8. Mix in the diced beef and green beans.

 

Stuff in 500 g sausage bags and refrigerate for 24 hours 

Boil for 45 min in 80C. 

Cool in ice water and refrigerate for 24 hours 

Cut and slice for sandwiches
