Piccalili

  • 2kg of Mixed Vegetables (Cauliflower, onions, gherkins, carrot, etc)
  • Salt
  • 1.5 litres of Vinegar
  • 250g Sugar
  • 50g Plain Flour
  • 15g Ground Ginger
  • 25g Mustard Powder
  • 15g Turmeric
  1. Cut the vegetables into small bite size pieces.
  2. Sprinkle with salt and let it rest for 30 min.
  3. Meanwhile boil the remaining ingredients and keep it warm.
  4. Wash the vegetables, strain and poor it in the pickle sauce.
  5. Let it boil for a few minuttes, just so the vegetables get tender but NOT overcooked.
  6. Remove from the heat and fill in sterilized glasses.
  7. Close immideately and let cool down to room temperatur.
  8. Keep in refrigerator

Ps. This is also the base for a good "remoulade-sauce".
