Cake Cream (simple)

Enclaires ready to be stuffed with cake cream.

Cake cream is used for e.g filling puff pastry like enclaires or as layer in a sliced sponge cake, it can also be used as additional ingredient in some remonces.

  • 2 eggs
  • 2 tbsp sugar
  • 1 tbsp cornflour
  • 250 ml milk
  • ½ teaspoon vanilla sugar


  1. Beat eggs and sugar together in a heavy-based saucepan.
  2. Whisk flour and milk, and bring the cream to a boil constantly whipping.
  3. Flavor with vanilla sugar. sprinkle sugar-cream while it cools down so that it does not draw skin.
