Enclaires ready to be stuffed with cake cream.
Cake cream is used for e.g filling puff pastry like enclaires or as layer in a sliced sponge cake, it can also be used as additional ingredient in some remonces.
- 2 eggs
- 2 tbsp sugar
- 1 tbsp cornflour
- 250 ml milk
- ½ teaspoon vanilla sugar
- Beat eggs and sugar together in a heavy-based saucepan.
- Whisk flour and milk, and bring the cream to a boil constantly whipping.
- Flavor with vanilla sugar. sprinkle sugar-cream
while it cools down so that it does not draw skin.
