Oven roasted Vegetables

Vegetables ready for the oven

Roasting your vegetables in the oven is an easy and healthy way to eat tasty vegetables.
Use only firm vegetables like potatoes, carrots, pumpkin, squash etc...

2 kg firmvegetables
I used:

  • 8 medium size potato
  • 2 carrot
  • 1 medium size squash
  • 1 quart of a pumpkin
  • 1 large yellow onion
  • 4 clove garlic
  • a handfull of French beans

The vegetables was drizzled with a marinate of

  • 2 tbsp good olive oil
  • 1 tbsp balsamic vinegar
  • 1tbsp honey
  • 1 tsp driedsage
  • salt & pepper

Cut the vegetables in good size chunks, just be sure they are about the same size.
Keep the French beans whole and half the garlic.

Spread the vegetables on a baking sheet and roast them in a preheated oven 180C. for about 40 to 45 minuttes or until done.


  • Marinate the vegetables

  • Spread on a baking sheet and roast

  • Here served with neck cutlet
