A panini is a sandwich made with Italian bread, usually served warmed by grilling or toasting.
The bread it self can be plain or with herbs incorporatet like thyme, rosemary or even sun dried tomatoes.
The filling is endless but ingredient
like tomato, mozzarelle, fresh basil, italian ham is very common.
- 1 biga starter (see here)
- 500 gms Flour
- 10 gms Salt
- 25 gms Olive Oil
- 10 gms Sugar
- 12 gms Yeast
- 300 ml Water
- Sun dried
Tomato or fresh herps (optional)
Start by making the Biga the day before.
Next day, mix the yeast in the water, use
a standmixer to combine the Biga with flour, salt, oil, sugar and yeast-water. Mix on medium speed for 8-10 minuttes until you have a elastic dough. Then add tomatoes and/or herps if desired.
Let the dough proof for an hour.
Devide the dough into 100 g buns and let it rest for 10 minuttes.
With a rolling
pin flatten and form the buns "cigar-shaped" and place on a baking trey with baking paper. Let the buns rest for another 10 - 20 minuttes.
Bake the bread in a preheatet oven at 160C. for 15 - 20 minuttes until done.
Let the bread
coll completely before slicing.
All that is left now is to fill with your favorite filling, grill and enjoy.
