Oven station ready to bake Bagels.
Form the dough into balls. Flatten the ball so you get kind of a disk. Now use two fingers and press a hole in the midle of the "disk" then spin the dough with the two fingers until you reach the desired bagel form - It is not that difficult once you
tried it once or twice.
Place the bagels on a baking trey with baking paper and let them proof for half an hour.
Cover with plastic wrap and refrigerate over night - This step is simply to develope flavor.
Now it's time to prepare your
Bring 5 l of water to boil with 25 g malt suryp and 10 g of baking soda.
Next prepare your seasoning mix. Here you can choose your own favorites or use mine as a guideline.
Preheat your oven to 210C. with fan if posible
Boil the bagels 60 sec pr. side.
work in batches with 4 bagels at the time.
Once they are boiled, take them out with a spider strainer or a fork. Dip the one side in the seasonal mixture and place the bagel, season side up,
on baking trey lined with baking paper.
They are now ready to be baked.
Place the trey in the center of your oven and bake for about 8 minuttes until golden.
Take them out and let them cool.
