Bagels

Ready to fill with your favorite filling.

Bagels take a little time to make, but the result is absolutely irresistible. Chewy texture, soft springy inside and malty-yeasty flavor. What more could you possible ask of a Bagel...

350 g Water
650 g Bread Flour
3 g Dry Yeast
25 g Sugar
25 g Diastatic malt powder
10 g Salt
25 g Malt syrup
10 g Baking soda
 
For seasonal topping (optional)
10 g Black sesame seed
10 g Dried onion flakes
10 g Sea Salt
7 g Poppy seed
5 g Dried garlic flakes
 
First make a sponge by mixing 350 g water - 250 g flour - 3 g dry yeast.
Mix it well and leave it to do it's magic for 4 to 5 hours at room temperatur. You should be able to see foam and bubbles, otherwise leave it for another hour or two.
 
In a bowl mix the remaining flour, sugar, diastic malt and salt and at the stand mixer gradually combine this mixture into the sponge. Mix it well on medium speed for 8 minuttes to get a smooth and elastic dough.
Cover the bowl with a damped cloth and let it rest in the refrigerator for half an hour.

Oven station ready to bake Bagels.

Form the dough into balls. Flatten the ball so you get kind of a disk. Now use two fingers and press a hole in the midle of the "disk" then spin the dough with the two fingers until you reach the desired bagel form - It is not that difficult once you tried it once or twice.
Place the bagels on a baking trey with baking paper and let them proof for half an hour. 
Cover with plastic wrap and refrigerate over night - This step is simply to develope flavor.

Now it's time to prepare your boiling station.
Bring 5 l of water to boil with 25 g malt suryp and 10 g of baking soda.

Next prepare your seasoning mix. Here you can choose your own favorites or use mine as a guideline.

Preheat your oven to 210C. with fan if posible otherwise 220C.

Boil the bagels 60 sec pr. side.
work in batches with 4 bagels at the time.

Once they are boiled, take them out with a spider strainer or a fork. Dip the one side in the seasonal mixture and place the bagel, season side up, on baking trey lined with baking paper.
They are now ready to be baked.

Place the trey in the center of your oven and bake for about 8 minuttes until golden.
Take them out and let them cool.

Bagels with cream cheese and herbs.

Fill the bagels to your liking or just toast it up with a little butter on the skillet.
Most people like the bagel with a good cream cheese.
