Tortilla

Tortillas ready to fill.

Tortillas is the base for many latin-american dishes such as Tacos, Burritos, Nachos, Enchiladas and many more.

Basicly there is two kind of tortillas - flour or corn. Which one you prefer I will leave up to you, I love both of them.

Tortilla recipe is so simple that many people struckle to make it right. You wish to improve the simple ingredients and end up with something different.

Tortilla is very simple and it should be that way, just a few basics and you will make your own homemade tortillas much better than the one you buy.

Flour Tortilla:

4 cups flour
1 tsp salt
2 tsp baking powder
2 tbsp oil
1 ½ cup water

Wisk flour, salt and baking powder in a mixing bowl. Add the oil and water and incorporate with your fingers. Once kneaded form it to a ball andlet it rest for 15 min.

Divide the dough into 8 - 10 small balls. Use a tortilla press to form the tortillas (that's the easy way) or place the small balls between 2 pieces of plastic and press with e.g a heavy soup pot, both ways work but if you are a tortilla freak then invest in the press. It makes it so much easier. 

Fry the tortillas on a cast iron skillet on medium to high heat for about a minut pr side or until brown spot appear.

Corn Tortillas:

4 cups corn flour (Masa Harina)
1 tsp salt
3 cups warm water

It's important that you use Masa Harina. Normal corn flour is produced with dried corn. The Masa Harine flour is made with dried corn treatet in a solution of lime and water.

Mix the ingredients in a mixing bowl. The dough should be firm and springy.
Let the dough rest for 15 to 20 minuttes. Divide the dough into 8 - 10 small balls. Use a tortilla press to form the tortillas.

Fry the tortillas on a cast iron skillet on medium to high heat for about a minut pr side or until brown spot appear.

Once a tortilla is ready cover it in a kitchen towel or in a dedicated tortilla warmer.
Let the tortillas damp and cool covered.
